Ingredients You’ll Need to Make Brownie Cake Balls
BROWNIES: This recipe calls for a box of fudge brownie mix. You can use your favorite brand, just make sure there are no fudge or frosting add-ins. You don’t want the brownies too fudgy to stick together. You will also need the ingredients listed on the box, such as water, oil or eggs so make sure to grab those too.
Do you have a homemade recipe you love? You can absolutely use that for this recipe. And if you’re not the baking type (or your kid waited until the night before to tell you they need a treat for calls) you can purchase an 8×8 pan of premade brownies from the store bakery.
FROSTING: You will need chocolate frosting for these bites, choose your favorite kind. If you have a homemade chocolate buttercream or chocolate ganache frosting you love you can totally use that. That being said, don’t use whipped cream-based frosting. The crumbled brownies will not be able to stick together if you do.
CHOCOLATE MELTING WAFERS: Melting wafers are perfect for when you want to put a chocolate coating on a treat but you don’t want the coating to become hard and brittle. The melting wafers are found with the rest of the chocolate items in the baking aisle, you’ll need 2 bags.
SPRINKLES: You don’t have to add sprinkles but… why wouldn’t you?? The longer sprinkles work better for this brownie balls recipe, and you can use rainbow sprinkles for a birthday, pink, red, and white for Valentine’s Day or red and green for Christmas, and so on!
How to Make Brownie Balls
Jump to RecipeSTEP 1 Prepare the brownies according to the directions for an 8×8 pan on the back of the box. The brownies need to be completely cool before making the balls so the brownies can even be made the day before. Break up the cooled brownies and put them in a mixing bowl.
STEP 2 Mix the brownies until they are crumbled and then add the frosting. Mix the frosting in until it’s well combined.
STEP 3 Scoop 1.5 tablespoons of the brownie mix using a medium cookie scoop, and roll it into a ball. Then place the brownie balls on a parchment paper or wax paper lined baking sheet. If the dough seems sticky, let it chill in the fridge for 30 minutes and then roll into balls.
STEP 4 Melt the melting wafers in the microwave in short intervals, stirring after each heating. When nicely melted, dip each brownie ball, one at a time, into the melted chocolate and evenly coat the ball. Gently tap off the excess chocolate and place the brownie ball back on the baking sheet to set.
STEP 5 Before the chocolate firms up, you can add sprinkles to the tops of the balls, if you are using them. Allow the brownie balls to sit for 30 minutes before enjoying them.
Tips & Tricks
- Homemade brownies and homemade frosting are great to use in this recipe, just make sure the brownies are not too fudgy or dense and that the frosting is buttercream based. If you use homemade frosting the brownie balls will need to be refrigerated after they’re prepared, but they can still be frozen.
- If you melt chocolate chips instead of using melting wafers you will need 3 cups of chips. You will also need 3 teaspoons of oil, like vegetable or coconut, to keep the melted chocolate chips smooth.
- These brownie balls will store well on the counter for up to 5 days, or in the fridge for up to 2 weeks. You can also freeze them in an airtight container or freezer bag for up to 3 months and thaw them at room temperature or overnight in the fridge before eating.
Variations
- Crumbled Oreo cookies are amazing in these little truffles and give them nice little pops of texture and added chocolate. Be sure to add 1/4 cup more frosting to the recipe when adding Oreos.
- When it comes to frosting ideas, you can’t go wrong with peanut butter! Replace 1/2 of the chocolate frosting with creamy peanut butter for a great peanut butter chocolate brownie ball.
- For a different flavor, you can also use a cream cheese frosting if you love the combination of chocolate and cream cheese.
- The chocolate coating can also be changed just by substituting white chocolate melting wafer. With so many delicious ideas, you might have to try them all!

How do you cook the inside of a brownie or an undercooked brownie?
The first step toward the perfect brownie is a fully preheated oven. Get that oven nice and hot well before you put your brownies in. Follow the timing instructions on the box or in the recipe but know that ovens vary so your brownies may or may not be done in that time.
When it comes time to check them, stick a toothpick in the middle and if it comes out clean the brownies are done. But what if you did that and once they cooled, the middle fell and you cut into it only to find it’s not actually done? The answer is to throw it back into the oven at the same temp for 3-4 minutes, until the middle is done.
You can absolutely do this after they have cooled, it will work! You can also put the brownies in the microwave, if they’re in a microwave-safe dish, and microwave them for 30-second intervals until they are cooked, just keep a close eye on them to prevent them from burning.

Brownie Balls
Ingredients
- 18 ounces fudge brownie mix plus ingredients to prepare
- 1 cup chocolate frosting
- 3 cups chocolate melting wafers (see note)
- Sprinkles optional
Instructions
- Prepare the brownie mix according to the package directions for an 8-inch x 8-inch baking dish. For best results, let the brownies cool completely before using. (I like to make them the day before.)
- Line a large baking sheet with parchment paper, wax paper, or a silicone mat. Set aside.
- Break the brownies up into large chunks and add them to a large mixing bowl or stand mixer fitted with a paddle attachment. Mix until the brownies are crumbled and all of the larger pieces are gone.
- Add the frosting and beat until fully incorporated into the brownie crumbs.
- Use a medium cookie scoop (1.5 tablespoons) to portion out the brownie mixture. use your hand to roll them into balls. Place the balls on the prepared baking sheet. (The mixture should be soft and shapeable but not leave a sticky residue on your hands. If it is sticky, try chilling the scoops for 30 minutes before shaping.)
- Melt the chocolate melting wafers in a wide mouth glass at 30-second intervals, stirring between each, until fully melted.
- Drop the balls, one at a time, into the chocolate and use a spoon to coat it. Use a fork to remove the ball from the chocolate and tap over the glass to remove any excess chocolate. Use a toothpick or another fork to help slide the ball off of the fork and back onto the baking sheet.
- Add sprinkles if desired before the chocolate sets. You can also allow the chocolate to set slightly and then drizzle more chocolate over the top of the balls.
- Let the brownie balls set fully at room temperature for about 30 minutes before enjoying or packing up.

- Brownie Balls can be stored in an airtight container for up to 5 days at room temperature or in the fridge for up to 2 weeks.
- To freeze, place the balls in a freezer bag and squeeze out any excess air and freeze for up to 3 months. Let thaw at room temperature.
- This recipe should work with any brand of box mix, but I prefer the Ghirardelli Double Chocolate. It’s important that you don’t use a brownie mix that has extra additions like fudge sauce or is overly gooey because it will be too soft for this recipe. Look for a regular fudge brownie mix.
- You can use 3 cups of chocolate chips instead of 20 ounces of chocolate melting wafers. You will want to add 3 teaspoons of vegetable or coconut oil to the chocolate before melting it so the chocolate has a smooth finish and isn’t super hard to bite into once it sets.
